Scout Notes

We’ve reached the point in our love affair with sushi that it just makes sense for us to be able to make it ourselves. But there’s that one pesky little problem: how the heck to they make those little rolls so delicious? Thank goodness the crew at Bottle Rocket Fine Food and Beverage is here to teach us everything we need to know about maki, nigiri and sake bombs. Just down the street from famous Walking Dead shooting locales, Castleberry Hill denizens celebrate raw excellence with sushi chef Jen Anderson, who's been with Bottle Rocket for several years, as well as with its previous incarnation, Wasabi. Bottle Rocket sprang to life in 2011 when owners Josh Calvin and Bonnie McKinnon added burgers and steaks to the already stellar sushi menu, and created a space where the whole community can gather for a good meal and a cold beverage.

For this exclusive sushi making class, Chef Jen is teaching us us novices how to roll with the best of ‘em (and as we found out, rollin’ ain’t easy.) The class starts off with a delicious and refreshing tiki-inspired adult beverage to get us relaxed, and a few appetizers to hold off the hangries while we work on our rolls. Jen dives into the finer points of polishing rice, pitting and slicing avocado, and getting the most out of your cucumbers. Afraid you won’t be able to remember how to do it on your own? Don’t worry- she’ll send you home with resources, including rice recipes and where to buy sushi grade fish. (Take this to heart Scouts- always get sushi grade if you're going raw. Don’t choose sushi making as the time when you play fast and loose with food safety.) The salmon nigiri lesson proves more complicated than anticipated, but the most important part of the lesson is how to eat it. Protip: use your fingers, not your chopsticks. Then we gear up for the ubiquitous California roll to teach us the techniques we’ll use on the star of the show: the Aloha Roll. It’s a signature roll with tuna, shrimp, mango and cucumber, all rolled up, dipped in roe (that’s fish eggs, for the uninitiated) and topped with aioli. And the best part about DIY-ing? We can customize the roll however we like. All that sushi making is bound to make a Scout tired and thirsty, so they’re providing a sake-bomb break in the middle of class- just what we need to refresh and get focused, and get ready for the best looking sushi roll contest.

Bottle Rocket isn’t just a comfortable neighborhood spot with exceptional sushi and burgers. They also make their community better by partnering with 3x3 Project, which is a community gardening effort committed to creating sustainable organic vegetable, fruit and herb gardens. 3x3 Project takes urban spaces- walls, rooftops, wherever- and make them into farms. If urban farming isn’t enough reason to love them, they also work with various organizations that serve veterans. Soon, Bottle Rocket will be getting edamame (and as much wasabi as they can produce) from 3x3 Project, grown right around the corner. It doesn’t get fresher than that, folks. And partnering with groups who make a difference in veterans’ lives? We couldn’t ask for more.
